When the coronavirus pandemic forced shutdowns throughout the U.S. in March 2020, most restaurants either shifted to offering takeout and delivery options only or shut down completely.

Humble resident Gia Do, however, saw an opportunity.

“Restaurants started shutting down everywhere, so we started thinking about opening a food truck because people still need to be eating,” Do said. “Plus, being outside was really good for people.”

Thus, MMM Crab—located at the FM 1960 Food Truck Park in Humble—was born.

Despite having no prior food industry experience, Do said MMM Crab quickly gained popularity after opening in October.

isine and seafood staples ranging from egg rolls and fried rice to shrimp burgers and Vietnamese street food.

MMM Crab’s most popular dish, however, is the soft-shell crab burger, which Do said is unique to the Greater Houston area.
